Mediterranean Chicken & Couscous

Ingredients:

  • 150g chicken breast (cut into strips)

  • 1/2 cup cooked couscous

  • 1/4 cup cherry tomatoes (halved)

  • 1/4 cup cucumber (diced)

  • 1 tablespoon olives (sliced)

  • 1 teaspoon olive oil

  • 1/2 teaspoon dried oregano

  • 1 tablespoon feta cheese (crumbled)

  • Juice of 1/2 lemon

Steps:

  1. Heat olive oil in a frying pan over medium heat and cook the chicken strips for 6-8 minutes, turning occasionally, until golden brown and cooked through. Sprinkle with dried oregano while cooking.

  2. In a bowl, combine cooked couscous, cherry tomatoes, cucumber, and olives.

  3. Add the cooked chicken strips to the couscous mixture.

  4. Drizzle with lemon juice, sprinkle with feta cheese, and toss gently to combine.

  5. Serve warm or cold as a refreshing, flavourful meal.
