1 small chicken breast (120g)
1 cup cooked rice (white or brown)
1 tsp olive oil
1 tbsp honey
1 tbsp wholegrain mustard
½ cup steamed greens (e.g., broccoli, beans)
Salt & pepper to taste
Heat oil in a pan and cook chicken for 4-5 minutes per side until golden.
In a small bowl, mix honey and mustard.
Pour sauce over chicken and cook for another 1-2 minutes.
Serve over rice with steamed greens.
