Miso-Glazed Chicken & Edamame Rice Bowl

Ingredients

  • 100g chicken thigh (or vegetarian swap below)

  • 1 tsp miso paste

  • 1 tsp soy sauce

  • ½ tsp honey

  • ½ cup cooked rice

  • ¼ cup edamame

  • ¼ cucumber, sliced

  • ½ tsp sesame seeds

Vegetarian Swap: Replace chicken with crispy tofu or tempeh.

Steps

  1. Mix miso paste, soy sauce, and honey to create a glaze.

  2. Coat the chicken (or tofu) in the glaze and pan-fry until cooked through.

  3. Serve over rice with edamame and sliced cucumber.

  4. Sprinkle sesame seeds on top before eating.
