Ingredients:

  • 1 small chicken breast (120g)

  • 1 cup cooked rice (white or brown)

  • 1 tsp olive oil

  • 1 tbsp honey

  • 1 tbsp wholegrain mustard

  • ½ cup steamed greens (e.g., broccoli, beans)

  • Salt & pepper to taste

Steps:

  1. Heat oil in a pan and cook chicken for 4-5 minutes per side until golden.

  2. In a small bowl, mix honey and mustard.

  3. Pour sauce over chicken and cook for another 1-2 minutes.

  4. Serve over rice with steamed greens.
