Egg and Veggie Muffins

Ingredients:

  • 4 eggs

  • 1/2 cup spinach, chopped

  • 1/4 cup capsicum, diced

  • 1/4 cup cherry tomatoes, halved

  • Salt and pepper (to taste)

  • 1/4 cup grated cheese (optional)

  • Cooking spray or oil

Instructions:

  1. Preheat oven to 180°C and grease a muffin tin.

  2. In a bowl, whisk the eggs with salt and pepper.

  3. Add the spinach, bell peppers, and cherry tomatoes to the egg mixture.

  4. Pour the mixture into the muffin tin cups, filling them about 3/4 full.

  5. Sprinkle cheese on top if desired.

  6. Bake for 15-20 minutes or until the egg muffins are firm and cooked through.
