

Ingredients:
4 eggs
1/2 cup spinach, chopped
1/4 cup capsicum, diced
1/4 cup cherry tomatoes, halved
Salt and pepper (to taste)
1/4 cup grated cheese (optional)
Cooking spray or oil
Instructions:
Preheat oven to 180°C and grease a muffin tin.
In a bowl, whisk the eggs with salt and pepper.
Add the spinach, bell peppers, and cherry tomatoes to the egg mixture.
Pour the mixture into the muffin tin cups, filling them about 3/4 full.
Sprinkle cheese on top if desired.
Bake for 15-20 minutes or until the egg muffins are firm and cooked through.
