

1/4 cup chia seeds
1 cup milk (dairy or plant-based)
1-2 tablespoons honey or maple syrup
1/2 teaspoon vanilla extract (optional)
1 ripe mango, diced
2 tablespoons coconut flakes
In a bowl, mix chia seeds, milk, sweetener, and vanilla extract (if using).
Stir well and refrigerate for at least 4 hours or overnight.
Once the chia seeds have absorbed the liquid and formed a pudding-like consistency, give it a good stir.
Top with diced mango and coconut flakes.
