1 large wholemeal or white tortilla
2 eggs
1 tbsp milk (or dairy-free alternative)
20g shredded cheese
1 slice ham, chopped
½ tsp butter or oil for cooking
Salt & pepper to taste
Optional: Baby spinach or hot sauce
Whisk eggs with milk, salt, and pepper.
Heat a pan over medium heat and add butter or oil.
Pour in the egg mixture, stirring gently to scramble.
When eggs are nearly set, stir in the cheese and ham.
Warm the tortilla and add the scrambled egg mix.
