Thai Tofu Lettuce Wraps

Serves: 1

Ingredients:

  • 100g firm tofu, crumbled

  • ½ teaspoon sesame oil

  • 1 garlic clove, minced

  • ½ teaspoon grated ginger

  • 1 tablespoon soy sauce

  • ½ teaspoon vegetarian oyster sauce (or extra soy sauce)

  • ½ teaspoon lime juice

  • ½ teaspoon brown sugar

  • ½ cup cooked jasmine rice (or quinoa for extra fibre)

  • 1 small carrot, julienned

  • 1 small cucumber, sliced into thin sticks

  • 3–4 large lettuce leaves (e.g., iceberg or cos)

  • 1 tablespoon crushed peanuts

  • 1 small red chilli, finely sliced (optional)

  • Fresh coriander leaves, for garnish

Steps:

  1. Heat sesame oil in a skillet over medium heat. Add the garlic and ginger, and sauté for 30 seconds until fragrant.

  2. Add the crumbled tofu and cook for 4–5 minutes, stirring occasionally, until lightly golden.

  3. Stir in the soy sauce, vegetarian oyster sauce (or extra soy sauce), lime juice, and brown sugar. Cook for another 2 minutes, allowing the flavours to combine. Remove from heat.

  4. Stir the cooked jasmine rice into the tofu mixture, mixing well to absorb the flavours.

  5. Lay out the lettuce leaves on a plate. Divide the tofu and rice mixture evenly among the leaves.

  6. Top each wrap with julienned carrot, cucumber sticks, crushed peanuts, and sliced chilli (if using). Garnish with fresh coriander.

  7. Serve immediately
