1 slice sourdough or wholegrain bread
1 egg
2 tbsp milk (or dairy-free alternative)
¼ avocado, mashed
20g feta, crumbled
½ tsp butter or oil for cooking
Salt & pepper to taste
Optional: Chilli flakes & lemon wedge
In a shallow bowl, whisk the egg, milk, salt, and pepper.
Heat a pan over medium heat and melt the butter or oil.
Dip the bread in the egg mixture, ensuring it's coated on both sides.
Cook on the pan for 2-3 minutes per side until golden brown.
Top with mashed avocado, crumbled feta, and a sprinkle of chilli flakes.
Serve with a squeeze of lemon if desired.
