Mediterranean Chickpea and Vegetable Stew

Serves 2

Ingredients:

  • 2 cans chickpeas, drained and rinsed

  • 1 onion, diced

  • 2 cloves garlic, minced

  • 1 can diced tomatoes

  • 4 cups vegetable broth

  • 2 cups fresh spinach

  • 1 zucchini, diced

  • 1 red capsicum, diced

  • 1 tsp cumin

  • 1 tsp paprika

  • 1/2 tsp cinnamon

  • 1/4 cup lemon juice

  • 2 tbsp olive oil

  • Salt and pepper to taste

  • 1/4 cup feta cheese, crumbled (or dairy-free alternative)

  • Whole grain pita bread for serving

Steps:

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until softened.

  2. Add zucchini and red capsicum, cooking for 3-4 minutes until slightly softened.

  3. Stir in chickpeas, diced tomatoes, broth, and spices. Bring to a boil, then reduce heat and simmer for 20 minutes.

  4. Stir in spinach and lemon juice, cooking until spinach wilts.

  5. Season with salt and pepper to taste.

  6. Serve topped with feta cheese and a side of pita bread.
