2 slices of whole-grain bread, toasted
1/2 ripe avocado
1/4 cup canned chickpeas, drained and rinsed
1 tsp olive oil
Lemon juice (to taste)
Salt, pepper, and red pepper flakes (to taste)
Fresh herbs (optional: parsley, coriander)
Instructions:
Mash the avocado with a fork in a small bowl and season with lemon juice, salt, and pepper.
Lightly mash the chickpeas with olive oil, salt, and red pepper flakes.
Spread the avocado mixture on the toasted bread, then top with the chickpeas.
Garnish with fresh herbs if desired.
