Black bean and avocado tacos with a side of coleslaw

Serves 4

Ingredients:

  • 4 small tortillas

  • 1 cup black beans (drained and rinsed)

  • 1 avocado, sliced

  • 1/2 cup shredded cabbage for taco filling

  • 1/4 cup salsa

  • 2 tbsp lime juice

  • Salt and pepper to taste

For the coleslaw:

  • 2 cups shredded cabbage

  • 1/4 cup vegan mayonnaise

  • 1 tbsp apple cider vinegar

  • 1 tsp sugar

  • Salt and pepper to taste

Instructions:

  1. In a skillet, warm the black beans with a pinch of salt and pepper.

  2. Warm the tortillas in a skillet or microwave.

  3. In a bowl, mix black beans with 1 tbsp of lime juice and salt to taste.

  4. Prepare the coleslaw by mixing shredded cabbage, vegan mayonnaise, apple cider vinegar, sugar, salt, and pepper in a bowl. Set aside.

  5. Assemble the tacos by placing warmed black beans, sliced avocado, shredded cabbage, and salsa onto each tortilla.

  6. Drizzle with remaining lime juice.

  7. Serve the tacos with the prepared coleslaw on the side.
