1 cup all-purpose flour
375g zucchinis (about 2 medium zucchinis), grated
1 onion, finely chopped
200g lean bacon or ham, diced
1 cup low-fat cheese (cheddar or mozzarella), grated
1/4 cup vegetable oil (such as olive oil)
Salt and pepper to taste
Preheat your oven to 180°C (350°F). Grease a 9x13 inch baking dish with vegetable oil or line it with parchment paper.
In a large mixing bowl, beat the eggs.
Gradually add the flour to the beaten eggs, stirring until well combined and smooth.
Add the grated zucchinis, chopped onion, diced bacon or ham, grated cheese, vegetable oil, salt, and pepper to the egg and flour mixture. Mix everything together until evenly combined.
Pour the mixture into the prepared baking dish, spreading it out evenly.
Bake in the preheated oven for 35-40 minutes or until the top is golden brown and the slice is set in the middle.
Once cooked, remove from the oven and allow it to cool for a few minutes before slicing into squares or rectangles.
