

Ingredients:
1 ripe banana (mashed)
2 eggs
2 tablespoons chia seeds
1/4 teaspoon cinnamon (optional)
1 teaspoon oil or butter (for cooking)
Fresh fruit or honey (for serving, optional)
Steps:
In a bowl, mash the banana until smooth.
Add the eggs and whisk together until combined.
Stir in the chia seeds and cinnamon, then let the mixture rest for 5 minutes to allow the chia seeds to hydrate.
Heat a non-stick frying pan over medium heat and add a small amount of oil or butter.
Pour small amounts of batter into the pan to form pancakes, about 10 cm wide.
Cook for 2-3 minutes on one side until bubbles form, then flip and cook for another 1-2 minutes until golden brown.
Serve warm with fresh fruit or a drizzle of honey, if desired.
