Banana & Chia Pancakes

Ingredients:

  • 1 ripe banana (mashed)

  • 2 eggs

  • 2 tablespoons chia seeds

  • 1/4 teaspoon cinnamon (optional)

  • 1 teaspoon oil or butter (for cooking)

  • Fresh fruit or honey (for serving, optional)

Steps:

  1. In a bowl, mash the banana until smooth.

  2. Add the eggs and whisk together until combined.

  3. Stir in the chia seeds and cinnamon, then let the mixture rest for 5 minutes to allow the chia seeds to hydrate.

  4. Heat a non-stick frying pan over medium heat and add a small amount of oil or butter.

  5. Pour small amounts of batter into the pan to form pancakes, about 10 cm wide.

  6. Cook for 2-3 minutes on one side until bubbles form, then flip and cook for another 1-2 minutes until golden brown.

  7. Serve warm with fresh fruit or a drizzle of honey, if desired.

Why we love it: These pancakes are quick, nutritious, and naturally sweet from the banana. The chia seeds add a boost of fibre and omega-3s, making it a wholesome breakfast or snack.

Serves: 1 serve (makes about 4 small pancakes).
