Savoury French Toast with Avocado & Feta

Serves: 1

Ingredients:

  • 1 slice sourdough or wholegrain bread

  • 1 egg

  • 2 tbsp milk (or dairy-free alternative)

  • ¼ avocado, mashed

  • 20g feta, crumbled

  • ½ tsp butter or oil for cooking

  • Salt & pepper to taste

  • Optional: Chilli flakes & lemon wedge

Steps:

  1. In a shallow bowl, whisk the egg, milk, salt, and pepper.

  2. Heat a pan over medium heat and melt the butter or oil.

  3. Dip the bread in the egg mixture, ensuring it's coated on both sides.

  4. Cook on the pan for 2-3 minutes per side until golden brown.

  5. Top with mashed avocado, crumbled feta, and a sprinkle of chilli flakes.

  6. Serve with a squeeze of lemon if desired.
