Cheesy Spinach Quesadilla

Ingredients:

  • 1 large wholegrain tortilla

  • 1/2 cup fresh spinach leaves (roughly chopped)

  • 1/3 cup grated cheese (cheddar or mozzarella)

  • 2 eggs (scrambled)

  • 1 teaspoon olive oil (for cooking)

  • Optional: salsa or sour cream for serving

Steps:

  1. Heat olive oil in a non-stick frying pan over medium heat.

  2. Place the tortilla in the pan and sprinkle one half with the grated cheese.

  3. Add the scrambled eggs and spinach on top of the cheese.

  4. Fold the tortilla in half to cover the filling and press gently with a spatula.

  5. Cook for 2-3 minutes on one side, then flip and cook for another 2 minutes until the tortilla is golden brown and the cheese is melted.

  6. Remove from the pan, slice into triangles, and serve warm with salsa or sour cream, if desired.
